I’m taking Second Baptist Church’s “Recipes & Memories” cookbook off the shelf and heading for the kitchen. We all need to eat more vegetables, so that’s what I’m going to concentrate on today.
Corn Casserole A great heart healthy dish is THE PARISH NURSES recipe for Corn Casserole. It’s easy and healthy and low fat. 2 cups corn; 3 ounces swiss cheese low fat, shredded; 1/4 cup whipped cream, light; 1/4 cup egg substitute; 1/8 teaspoon pepper. Combine all the ingredients in a large bowl and mix. Pour mixture into a quart casserole dish and bake at 350º for 35 minutes. Serve hot. The swiss cheese adds a nutty flavor and goes well with the corn. Try it!
Cranberry Apple Casserole Cranberries continue to become very popular. If you make this dish you too will become popular. YVONNE HOLLAND shares this terrific dish. Cranberry Apple Casserole. 3 cups apples, cut and unpeeled; 2 cups raw cranberries; 1 cup brown sugar; 1 cup white sugar;1 stick butter, melted; 1 cup uncooked oatmeal; 1/3 cup flour; 1/2 cup brown sugar; 1/2 cup chopped nuts. Sprinkle sugars over apples and cranberries in casserole dish. Mix last five ingredients together and sprinkle over fruit. Bake at 350º for 45 minutes! How easy is this? Talk about good. This recipe is a keeper.
Cheesy Broccoli Bake If you like broccoli and you like cheese - this is it! VONDA KAY ROLLINS shares her great recipe. Cheesy Broccoli Bake. Yum! 1 package frozen broccoli; 1/2 cup mayonnaise; 1/2 cup cream of mushroom soup; 1 egg beaten; 1 1/2 cup grated cheese (your choice - I used cheddar); 1 cup crushed crackers. Cook broccoli according to package directions; drain well and cool. Combine mayonnaise, soup, egg, and grated cheese; stir into cooked broccoli. Pour into buttered casserole dish and sprinkle cracker crumbs on top. Bake at 325º for 30 minutes.
